6.11 Licences, Permits & Compliance
Opening LAMBA requires more than finding the right premises and designing an inviting space. As with any hospitality business in Sweden, a number of legal, operational and safety requirements must be satisfied before opening.
Although the list may initially appear extensive, most requirements are standard for cafés and are entirely achievable with careful planning. The objective is not simply to obtain the necessary approvals, but to establish operating procedures that ensure LAMBA remains safe, compliant and sustainable over the long term.
The following overview summarises the principal licences, registrations and ongoing responsibilities anticipated for the project.
Business Registration
Before trading, the business must be formally established in Sweden.
This includes:
• Registering the company
• Registering for F-tax (F-skatt)
• VAT registration
• Employer registration (once staff are employed)
These registrations form the legal basis for operating the business.
Food Business Registration
As LAMBA prepares and serves food and beverages, the café must be registered as a food business with Malmö Municipality before opening.
The Environmental Department will normally inspect the premises to ensure that food preparation, storage, hygiene procedures and operational routines comply with Swedish food legislation.
The inspection typically covers:
• Kitchen layout
• Food storage
• Refrigeration
• Cleaning routines
• Waste management
• Personal hygiene facilities
• Temperature control

Food Safety Management
LAMBA will operate under documented food safety procedures based on HACCP principles.

Where possible, LAMBA will prioritise an existing café or hospitality premises, as this can significantly reduce renovation costs, shorten the approval process and minimise regulatory complexity.
Fire Safety
The premises must comply with Swedish fire safety regulations.
This includes:
• Fire extinguishers
• Emergency lighting
• Clearly marked escape routes
• Staff evacuation procedures
• Appropriate electrical safety
Fire safety should be considered as part of the architectural design rather than added as a later requirement.
Accessibility
LAMBA aims to be welcoming and accessible to as many people as possible.
The design should consider:
• Step-free access where feasible
• Accessible circulation within the café
• Suitable customer toilet facilities (where required)
• Clear customer movement throughout the space
Accessibility should be integrated into the project from the earliest design stages.
Music Licensing
As recorded music forms a central part of the LAMBA experience, the appropriate public performance licences will be obtained before opening.
These licences cover the legal public use of recorded music within the café.
The licensing requirements will apply regardless of whether the music is performed live by the owner, played from vinyl records, or presented through carefully curated recorded listening sessions.
Alcohol Licence (Future Phase)
LAMBA is designed to operate successfully as a café from its first day of trading.
Should a natural wine programme be introduced in the future, the business will apply for the necessary alcohol serving licence.
This process generally requires:
• Responsible alcohol service training
• Demonstration of suitable food service
• Approved premises
• Financial suitability
• Municipal approval
The wine programme therefore forms a future development stage rather than an opening requirement.
Employment Responsibilities
As the business grows, LAMBA will comply with Swedish employment legislation.

• Workplace health and safety
The intention is to build a small, highly capable team while providing stable and responsible employment.
Insurance
Before opening, appropriate business insurance should be arranged, including:

Given the specialist audio equipment used throughout the café, appropriate equipment cover will be particularly important.
